This will be the first Christmas we will have together in our own place and I want it to be one we will remember. As I’ve been out to any and all craft stores in the area for wedding projects recently I managed to get some amazing deals on items we’ll use for Christmas and the rest of winter.

donnajean315 asked: I tried the Alton brown method for wings today. Steam for 10 minutes, pat dry then refrigerate for at least two hours. Bake at 425 for 20 min turn and 20 additional minutes. I just used the seasoning salt. Better than the baking powder method! Enjoyed your company!
That sounds great, I will definitely be checking out more of the recipes from Cook’s Country! We had a great time too, we’ll have to do it more often.
Roasted Red Pepper Turkey Panini Sandwiches
For a picnic in our park (and an excuse to use the mason jar glasses I got for my birthday) I made the sandwiches using whole grain buns, garlic hummus, turkey breast, roasted red peppers, and mozzarella cheese. i packed pasta salad, a green leaf salad, lemonade and my Sunday go-to: Bloody Mary’s.
Pineapple Infused Vodka
This is the easiest way to ‘make’ your own flavored drinks. Once your ingredients are prepped and mixed just wait 2 weeks and it will be ready to taste test. This time I followed the recipe, but next time I use pineapple I’ll use just 1/2 since it soaks up so much of the vodka.
1/2 large chicken breast marinated, grilled, and shredded
2 ripe strawberries sliced
Chow Mein noodles
Shredded Parmesan cheese
Lite Balsamic Vinaigrette dressing
Pepperoncini or banana pepper
Strawberry Pretzel Salad
2 c crushed pretzels
1/3 c melted margarine
2 t salt
Combine and bake in a 9”x13” baking dish at 350 for 10 minutes. Allow to completely cool.
In a separate bowl combine:
1 tub lite cool whip
8 oz. Neufatchatel cheese softened
1/3 c splenda
Layer mixture over pretzel crust and place in freezer.
In a separate bowl prepare:
2 packages strawberry jello as directed with ice cubes.
Refrigerate for 5-10 minutes until nearly soft-set.
Stir in frozen sliced strawberries and ladle carefully over cream layer.
Refrigerate for 2 hours prior to serving.
1 c watermelon vodka
1 c triple sec
Splash of lime juice
3 drops red food coloring
Combine ingredients with crushed ice in a blender until smooth.
Place in freezer for 5 minutes or more for desired chill.
Makes 2 servings.
Garnish, serve, enjoy!
3# potatoes with skins left on
1/2 c water
1/2 c miracle whip
1/4 c ranch dressing
1 pkg. prepared bacon crumbles
3/4 c shredded cheddar cheese
Sprinkle of salt and black pepper
Add water to a microwave safe dish along with cubed potatoes, cover with saran wrap and ventilate. Microwave on high for about 12 minutes or until tender and drain. Place dish of potatoes in refrigerator for 1 hour or until completely cool. Mix remaining ingredients and add to potatoes mixing gently. Season with black pepper and sprinkle with parsley and chives
Sweet & Savory Kabobs
Marinated in soy sauce, olive oil and bbq seasoning rub for about a half hour before grilling until all vegetables were tender.
Cinco de Mayo
Red wine sangria, guacamole, and chicken quesadillas.
1 bottle dry red wine
1 cup cranberry raspberry cocktail juice
1 cup diet 7up
Strawberries, watermelon, and peaches chopped
Stir all ingredients in a pitcher and allow to sit for about an hour before serving. Serve over ice and garnish away!
2 burrito size flour tortillas
3 oz. Mexican mix shredded cheese
1 chicken breast cooked and chopped
Season chicken with hot Mexican cayenne pepper, cumin, and garlic powder. Put chicken on one half of each tortilla, cover with cheeses and grill in panini press. Serve with a side of salsa and plenty of freshly mashed guacamole.

Rip’n Chick’n Salad
After seeing Popeye’s ads for their new fried chicken I decided I wanted to try it out with my new fryer I got for Easter.
1 head of lettuce or mixed greens
2 large chicken breasts with rib meat
1 serving seasoned fries
Sprinkle of shredded cheddar cheese
1/4 cup flour
1 cup panko bread crumbs
1 tsp ground black pepper
1 tbsp garlic & butter wing seasoning
Sprinkle of wing dust
Using kitchen shears slice each of the breasts in 5 or 6 “strips” horizontally (opposite side remains uncut). Then thoroughly flour both breasts and place in refrigerator for about 30 minutes. Beat eggs in separate bowl. Mix breadcrumbs, pepper, garlic seasoning and wing dust in separate bowl. Remove chicken from refrigerator and dredge in egg then breading. To fry the meat I used my Presto fryer cooking each breast for 10-12 minutes. Serve over lettuce and fries with ranch dressing.
The chicken breasts were really easy, the only thing I’ll do differently next time will be frying the fries instead of baking them so they’re crispier.
